Easy, healthy, back-to-school recipes

Now that summer is over and the kids are back in school, one of the biggest challenges parents face is finding fast, healthy breakfast options. When it's time to run to the bus stop and your son has two different-colored socks on and his shirt is inside-out and backwards, there's hardly time to prepare a gourmet breakfast!

One of my favorite tricks is to take a few minutes before I go to bed and mix about 1 cup of plain Greek yogurt (2%) with 1 tablespoon of Justin's almond butter (to diversify my healthy fat intake) and a handful of fresh berries. I pack the container in a plastic bag with a spoon, a couple of napkins and a bottle of water, and all I have to do in the morning is grab it on the way out the door (without tripping over my kids' shoes).

I recently came across this delicious and healthy breakfast option that is even easier to prepare than mine, if that's possible. You only need two ingredients and a knife.

Easy Prosciutto and Cantaloupe


-1 ripe cantaloupe
-8 thin slices of Prosciutto

1. Remove the rind and seeds from the cantaloupe and discard. Slice into bite-sized portions or sections.
2. Wrap each piece of cantaloupe carefully with a slice of the Prosciutto. Enjoy!

Note: If you keep Kosher, you can easily modify this recipe with thinly sliced Nova salmon or sliced turkey breast. In any case, stay away from products containing nitrates and nitrites!
